Cultivation technology of Shiitake mushroom (Lentinula edodes)
The cultivation technology of the edible and medicinal mushroom Lentinula edodes commonly called as Shiitake mushroom has been standardized. The flow chart of the technology is as follows.
Substrate preparation
(Mixture of hard wood sawdust, wood chips, Rice bran and calcium sulphate)
Fill one Kg wet substrate (65% moisture) to Polypropylene bags, plug with non-absorbent cotton
Sterilize the substrate (121°C, 15 lb pressure for 90-120 minutes in autoclave)
Cool the bags to room temperature
Spawning (Aseptically, @ 5% of wet substrate)
Spawn running (22-26°C, 60-70 days)
Initial spawn running
Mycelial coat formation
Blister formation
Open bags for browning
Cold water shock treatment (10-15°C water, 6-8 hours)
Fructification (22-26°C, 80-85% R.H, Light, cross ventilation)
Pinheads Ready to harvest mushrooms
Sold as fresh or dry mushroom

- Spawn of commercial varieties of Oyster mushroom (Pleurotus species), Milky mushroom (Calocybe indica), Shirotamogitake (Hypsizygous ulmarius) and Shiitake (Lentinula edodes) can be procured in person on prior order basis.
