Watermelon rind candy
Application / Use: It can be used in confectionary, toffees, in bread, in cakes, custards and sweet meats
Input Needed: • Watermelon rind (thicker rind)
• Sugar
• Desired Food grade colour
• Citric acid
• Air Circulated Drier
• Stainless steel vessels, knives, spoons etc.
Output Capacity: 60 kg/100kg of rind

Description: The left out white rind of watermelon, which is normally discarded after eating the fruit, can be converted in to value added product such as watermelon candy. Using this process candy can be prepared at small or cottage scale.
